JACKFRUIT is not only a very tasty fruit and vegetable it is also a super easy big growing tree!
The jackfruit is recognized as the largest tree fruit, growing as big as 3 feet long and 18 inches wide; and weighing as much as 25kg!!
Jackfruit seeds can aid in healthy blood circulation that is vital for good hair growth.
Ripe jackfruit is eaten as a fruit but unripe jackfruit is prepared as a vegetable.
Jackfruit is made up 80% of water.

Here our favorite Jackfruit Curry Recipe
Ingredients:
(3-4 portions / cooking time – 30 min)
1 jar of AMUURAs jackfruit1 chopped red onion
2 garlic cloves
1 green or red chili, finely chopped
2 tbsp. plant or coconut oil
1 tsp. cumin
1/2 tsp. ground coriander
1 tsp. curry powder
1/4 tsp. ground black pepper
1/2 tsp. fenugreek seeds
1/2 tsp. ground black mustard seeds
1/2 tsp. chilli powder
3 tsp. ground turmeric
2 small pieces of AMUURA cinnamon
6-8 curry leaves
1 cup (240 ml) fresh coconut milk
1/2 cup (120 ml) water
1-2 tbsp. lime juice
1 tbsp. sugar
3/4 tbsp. salt
chopped fresh coriander leaves
- Heat up the oil over medium heat. Add onion, garlic, chilli, curry powder, cumin, coriander, black pepper, fenugreek seeds, black mustard seeds, chilli powder, turmeric, cinnamon, and curry leaves. Continously stir for 3-5 minutes.
- Drain the AMUURA jackfruit and add as well as the lime juice and salt, continue to stir for another 3-5 minutes.
- Add the coconut milk and stir until boiling. Return to simmer for an additional 12-15 minutes. Keep the pot covered and stir in between until the jackfruit is soft. If you prefer a thinner curry add water during this time.
- Serve with rice and top with freshly ground coriander leaves.

Vegan Jackfruit Burger
A healthy and
incredibly tasty vegetarian and vegan alternative. Quick and Easy!
(Prep Time45 mins)
One Jar of AMUURAs
Jackfruit
1
tablespoon olive oil
1/2
yellow onion, sliced
3
cloves garlic, minced
1/4
cup vegetable broth or water
3/4
cup (vegan) BBQ sauce
Instructions
- Preheat your oven to 400F (200C). Lightly grease a baking pan.
- Drain and rinse the jackfruit. Cut the jackfruit into smaller pieces by cutting it from core to the edge.
- Add the olive oil to a large frying pan over medium-high heat, and when hot add the onions and garlic. Sauté until the onions are tender and beginning to brown, about 5 minutes. Add in the chopped jackfruit and vegetable broth. Cover and continue to cook another 8 to 10 minutes, until the jackfruit is soft enough that it can be mashed. Mash the jackfruit with potato masher, until it breaks apart and looks pulled or shredded.
- Chopp fresh vegetables as desired (eg. simple coleslaw of shredded cabbage and tossed carrots)
- To finish the jackfruit spread in an even layer across the baking pan and then pop it in the oven for 15 minutes. Remove from oven and pour over 1/2 cup BBQ sauce and stir to combine. Toss it back in the oven for about 10 minutes, until it looks delicious and golden and even a few strands get a bit burnt. Remove from the oven and if desired stir in the remaining 1/4 cup of BBQ sauce to make it even saucier.
- Fill up your bun and enjoy!
